Cajun Salmon

I’m always looking for ways to include more fish in my diet. Oily fish such as salmon is rich in omega 3 healthy fatty acids so it’s a great choice if your looking to eat more fish. This recipe however works great with almost any fish. You can even use this rub on your chicken or even to make some lovely spiced potato wedges.

What you need

    • Smoked paprika
    • Cayenne pepper
    • Garlic powder
    • Dried thyme
    • Salmon fillets
    • Olive oil
    • Light brown sugar
    • Red onion
    • Avocado
    • Cherry tomatoes

HOW TO MAKE

1. The spice rub

Combined the following in a bowl to create this yummy spice mixture for our fish.
1 table spoon of paprika
1 table spoon of cayenne pepper
1 table spoon of garlic powder
half a table spoon of dried thyme
1 table spoon of light brown sugar
half a tablespoon of salt.

Use the bottom of a spoon to crush them all together in the bowl.

2. The salmon

Rub all of the yummy spice mixture into each piece of salmon. Make sure to cover both sides! Once fully covered wrap each salmon up in cling film and pop the salmon in the fridge. You can leave it to marinate for as long as you like depending on your time. If your hungry don’t worry just a few minutes in the fridge while you heat your pan is going to do wonders!

3. Cooking the salmon

Brush your salmon with a little bit on oil on each side then drop into a nice hot pre-heated pan. Fry or grill each piece of salmon for 3-4 minutes on each side.

4. Constructing the salad

As your fish is frying away start to finely chop some slices of red onion. Half up some small cherry tomatoes and add any extra greens you want. I like to add avocado too for more of those healthy fats.
